About the Recipe
Having Bone Broth in the fridge is incredibly handy, it elevates soups, stews, risottos and one pot dinners. Also Bone Broth is incredibly good for you and has a long list of benefits. I personally prefer Chicken Bone Broth as it's a more versatile, pleasant taste and not as gritty as red meat broths.

Ingredients
0.5 - 1kg Chicken FeetÂ
1.5 - 2kg Chicken CarcassesÂ
2 CarrotsÂ
Bunch of Celery and/or left over Celery topsÂ
Bunch of Parsley
1 OnionÂ
Knob of GingerÂ
4 Cloves of GarlicÂ
3 Bay leavesÂ
1 tsp Pepper CornsÂ
1/2 cup Apple Cider VinegarÂ
Notes: Leave the skins on everything. You can add many odds and ends from your crisper, any root vegetables that are on their last legs will go great in the Bone Broth.
Preparation
Put everything in a large saucepan/stock pot and cover with water, bring to boil, approx 1 hour.
Reduce to simmer with lid on for 3 to 4 hours, then remove lid and simmer for 2 to 3 more hours. Remove any chicken meat, and put the bones and any skin back in the pot, let it still overnight before straining. The longer you can simmer this, the more you can extract from the bones, don't be precious about the timings here, go as long as your life's commitments can allow.
Reheat in the morning to loosen the liquid before straining. You can go a step further and strain a 2nd time through a cheesecloth if you prefer. Alternatively all the sediment will fall to the bottom of the storage containers. I give this layer, along with the removed chicken meat to my dog Macabee - bone broth is great for dogs as well.

Notes: Going to your local butcher will be helpful for this. You can ask for a chicken broth "pack" of a few kilos, this usually includes; carcasses, wings, legs, necks and some feet. I then ask for additional feet separentley. I usually get a 1.5 - 2 kilo "block" of feet (they will usually be frozen all together and the butcher will saw blocks for you).
